Mountain Hen Bakery, we create pastries with a purpose!
Eating dessert can be sweet and fulfilling; indulging in our artisanal pastries
crafted from ingredients sourced to have a positive impact helps us help you
make a difference. We
wholesomely source ingredients from the Texas hill country from like-minded
craftsmen and women. We are passionate about connecting the community to these
local farmers and producers, allowing them to share their intimate stories
about the land and animals with which they work. Our
commitment to sustainability includes raising free-range hens that supply the
bakery with eggs. A portion of ingredients from herbs to various fruits and honey are grown on the land surrounding the ghost bakery. Difficult
ingredients to source like coffee, chocolate, and vanilla beans are
procured from companies that are as passionate as we are about making a positive change both socially and
environmentally.
Owner Melissa earned her undergraduate degree from Johnson & Wales University, where she studied baking and pastry arts under European chefs. Melissa has her master’s in Food Business Studies. She spent her career as a pastry chef in notable fine dining establishments throughout America, including The Kiawah Island Club, The Four Seasons Philadelphia, and The Woodlands Relais & Chateaux. Melissa is a Professor of Baking & Pastry Arts at The Culinary Institute of America.
