The Academic Journey
All good journeys begin with the study of a craft. Melissa – current owner and operator of Mountain Hen Bakery – earned her undergraduate degree from Johnson & Wales University, where she studied pastry and baking arts under European chefs.
She spent her career as a pastry chef in notable fine dining establishments throughout America, including The Kiawah Island Club, The Four Seasons in Philadelphia, and The Woodland’s, Relais & Chateaux. Melissa is a Professor of Baking & Pastry Arts at The Culinary Institute of America.
With all of this training, she was finally ready to open her own place.
A 10-Acre Farm Filled with Love
On site her pristine little farm, she has beautiful free-range hens that support her pastries with their organic eggs.
