5 Questions in 5 Minutes: Mountain Hen Bakery

If you’re looking for a wedding baker with both exceptional style and taste, look no further than Mountain Hen Bakery. This week we spoke with owners Melissa Fritz and Stephane Leopoldo about their pastry business, what inspires them and what they love about being wedding bakers.

What services do you provide?

At Hen & Thistle, we have a vast pastry portfolio available for online ordering and delivery. We also offer wedding cakes and customized dessert buffets.

What inspired you to start this company?

The idea of Mountain Hen Bakery was born when we purchased 10 acres in the Texas Hill country. Stephane being laid off at the start of COVID in 2020 inspired us to begin this journey.

Why do you love this company and your job?

Our kitchen is located on our beautiful farm. We are inspired by nature every day,  from our gardens to our free-range hens, it is easy to work within the seasons to develop our menus.

What other cities or locations have you worked weddings in?

Stephane is from Paris, France where the French wedding cake called Croquembouche reigns supreme. He has many stories of adventurous deliveries and high-end wedding extravaganzas.

Are you married? Do you have children? Tell us about your family.

Stephane and I are married with two little boys, Nohlan-9, and Weston-7. We met while teaching at the French Culinary School, Lenotre. Our first child was born on our one-year wedding anniversary; it was meant to be.
